Doña Ana County’s Board of County Commissioners honored, Roberto Estrada, a beloved and respected member of the community, by presenting a proclamation to his family during its regularly scheduled meeting on August 24. “Roberto left an indelible mark on the Mesilla Valley Community, so we thought it important to recognize him in a big way, very much like how he impacted so many of us,” said County Manager Fernando Macias.
Roberto Estrada’s name is synonymous with delicious enchiladas, most famously as the world record holder in the Guinness Book of World Records from the year 2000 to 2010 for the world’s largest enchilada. His work ethic stemmed from a great family model, with him learning to press tortillas at age 15. Estrada founded La Bonita Food Products, the New Mexico Mexican Food Products and Roberto’s Mexican Food, where he continued to serve others and contribute to community events humbly and generously.
The love and support Roberto Estrada showed to the community will live on through his family, his friends, and supporters. We mourn his loss, but most importantly celebrate his life by remembering the contributions he made as a business owner, community supporter, philanthropist, world record holder, and especially, as a friend.
On September 1, fellow Mexican food restaurants on Amador Avenue in Las Cruces plan to honor Roberto Estrada’s memory with a special enchilada menu item. The restaurants are:

- Saenz Gorditas
- Amador Live
- Delicias Del Mar
- Las Trancas
- Hacienda Del Sol
